Last week there was a thread with Easter recipes (I can't find it now!), and I just wanted to thank whoever it was that posted the Chocolate Eclair Cake recipe! It was so easy to make, and it was a HUGE hit!

Here's that recipe:

Chocolate Eclair Cake

1 (1 lb.) box graham crackers
2 sm. pkgs. instant French vanilla pudding
3 1/2 c. milk
1 (9 oz.) container Cool Whip

Butter bottom of 9 x 13 inch pan, line with graham crackers. Mix pudding with the milk. Beat at medium speed for 2 minutes. Blend in Cool Whip. Pour half the mixture over graham crackers then place second layer of crackers over pudding. Pour remaining pudding mixture over and cover with more crackers. Refrigerate for 2 hours then frost. Serves 12 to 14.

Frosting

2 pkgs. Nestle chocolate, premelted (Baker's unsweetened premelted baking chocolate flavor)
2 tsp. white Karo syrup
2 tsp. vanilla
3 tbsp. butter, softened
1 1/2 c. powdered sugar
3 tbsp. milk

Beat all ingredients until smooth; spread over cake. Refrigerate 24 hours. Really tastes like an eclair.

FYI: * If there is no time or energy for home made frosting, you can heat up a can of frosting and pour over cake ;)

I used to make that but after using the frosting once, I decided to make it a little different. Instead of the frosting, I swirled Hershey's syrup over the top and crushed more graham crackers. Always a big hit and very rich!!
 
It has always been a huge hit and is a must at every family function of ours. My Mom always makes it, although over the years she's made slight variations to the frosting to make it better tasting and/or healthier/lighter.

We've also done variations where me mix up sliced bananas in the pudding layers and topped with cut strawberries (instead of chocolate) when they're ripe and in season :thumbsup2.
 
I'd like to try a variation usin' filo pastry instead of the graham crackers.

Keep it up folks, we can come up with a slew of variations. :lmao:

I've made it with store bought frosting and it is fine. Also, you can make a Weight Watchers version with sugar free pudding and fat free cool whip.
 
I used to make this years ago, and my recipe was the one where you put an entire can of hershey's syrup over the graham crackers and pudding. Yum!
 
I've never tried the graham cracker crust recipe. The recipe I have calls for a flour/water/salt crust that you bake, very much like a real eclair. French vanilla pudding, but instead of frosting you drizzle a bottle of the chocolate ice cream shell over the top of it.

I'm going to give the other variation a shot.

Did you end up using the canned frosting or the recipe? I am thinking of making this for a work party this week. TY!
 
I've made it with the canned frosting, and it's wonderful.

I've also made it with pistachio pudding, with cheesecake pudding, and white chocolate pudding. Very yummy!! The variations are almost endless. I really like the graham crackers, as they get quite soft and yummy!
