Chocolate Coating Mickey Ice Cream Bar

I am planning to make a giant Mickey Ice Cream Bar for my husband's birthday. I did it two years ago. It worked great, (Hagen Daz ice cream frozen in different sized cake rounds topped with melted Dove chocolate), except for the coating it in chocolate part. The top was fine but the chocolate wouldn't stick to the sides of the ice cream.

Anyone have any advice on how to remedy this? I'm thinking either my ice cream wasn't frozen enough or my melted chocolate was too hot still.

How did you apply the chocolate? Did you pour it over or did you dip it?
 
I poured the chocolate over the top; the cake was too big to dip (8 or 9 inch pan for head, 4 or 5 inch pans for ears). Chocolate was fine on the top but just dripped over sides. I tried spreading it around sides but it just slid down and pooled at the bottom.

If anyone has a better way to make them, I am open to making smaller ones I could dip or any other suggestions from those who have attempted to replicate this favorite park treat!

how about if you try this...(disclaimer, I haven't done it but think it might work...)

lay a large piece of plastic wrap on your counter/table - long enough to go around the perimeter of the whole cake (or I suppose you can do it in smaller pieces). pour your melted chocolate on the plastic wrap, spreading to the depth of your cake. Let cool/harden slightly, and while still pliable, pick it up and apply to the side of your cake, shaping it around the sides. Once you have it smooth, take off the plastic wrap. Pour chocolate over the top, smoothing the edges with a spatula. You could probably easily spread an additional layer of chocolate around the sides, too. It just needs something to stick to.

Now that I've written this, I think it would be easier to do it in smaller pieces...the ears, then the head. One piece might get a bit long...

This would probably be expensive but you could just buy a bunch of the Magic Shell topping and pour over the top.....
