Chicken Thigh Recipe Needed

I'm going to a house party this weekend and they asked me to bring a tray.

Chicken thighs were on sale and I bought a huge package.

Please give me your favorite easy, peasy chicken thigh recipe that will WOW a crowd. :goodvibes

I'd pound them out, marinate them then put them on water soaked sticks then bake them. You could marinate some in teriyaki, some in balsamic and some in a citrus marinade. You could roll them in panko crumbs prior to baking. You'll have to remove the bone, of course. Soaking the sticks makes sure they don't burn and the sticks are a way for people to walk around eating them. I can't think of another way to present thighs for a party that would be easy to eat.
 
Here's my go to thighs recipe. I love them they are so easy.

4 chicken thighs, skin on
3/4 teaspoon salt
3/4 teaspoon black pepper
1 cup onion, diced
1 1/2 tablespoons chopped garlic
3 cups white mushrooms, washed and diced
1/3 cup dry white wine
1 tablespoon chives, chopped


Set the chicken thighs skin-side down on a cutting board. Cut a 1/2 inch thick slash on either side of the thigh bone. Season the thighs on both sides with 1/2 teaspoon of salt and 1/2 teaspoon of pepper.


Place the chicken thighs skin-side down on non-stick skillet. Only then turn the heat to high. When the chicken starts to sizzle, turn heat to medium and move the thighs around to make sure they aren't sticking to the skillet. Cover the skillet and cook for 16 to 18 minutes. Check the chicken occasionally to keep it from sticking. If the skin is browning too much after 10 minutes, then turn the heat to low. When done, transfer the thighs to a warm oven.


Pour off all but 2 tablespoons of the chicken fat in the skillet. Turn the heat to high and then add the onion, garlic, and mushrooms. Sauté, stirring often, for about 3 minutes. Sprinkle in the remaining salt and pepper. Then pour in the wine. Continue to cook for one minute over high heat until the sauce reduces.


Spoon some of the sauce onto a plate and top with one of the chicken thighs. Sprinkle on some chives and serve.


I would just make a big tray with the mushrooms on the bottom- crispy chicken thighs on top.
 
I would do a search for Disney's Bengal Barbeque chicken recipe. They are like a chicken satay sort of and they are on a stick so they are perfect party food. Yummy. My husband was able to find the recipe with a google search before so I know it's out there. If I can find my copy I will post it.
 

My easy receipe is for 5 thighs"

2 small cans of fat free cream of mushroom soup
1 small can of garlic cream of mushroom soup
4oz of milk
salt and pepper to taste

Mix soup/milk/salt and pepper in a bowl
Place chicken in a 9x13 casserole dish
Pour soup mixture over chicken
Bake 350 for 40 minutes or until done.


Or if you have a crookpot

Mexican Crockpot Chicken

4 -5 boneless skinless chicken breasts
1 (15 1/2 ounce) can black beans , drained
1 (15 ounce) can corn , drained
1 (15 ounce) jar salsa
4 ounces fat free cream cheese
4 ounces nonfat sour cream

Directions:
1 Place all ingredients except cream cheese and sour cream in crock pot.
2 Cook on low 6 hours or on high 4 hours.
3 Last 45 minutes add sour cream and cream cheese.

I try to eat healthy, so I get frustrated when I attend gatherings and everything is smothered in canned soups, sugar, artificial ingredients, etc.

If you make these or another healthy food, I recommend making a name card for them with caloric info per thigh. :)
 
Not sure if these would work for a "tray", but if a "dish" will do, this is what I started just last night: http://thepioneerwoman.com/cooking/2009/11/white-chicken-enchiladas/ (I'm a working Mom - so I boil the chicken the night before.)

I use unfried flour tortillas just 'cause I don't like corn tortillas, and add green or red pepper to the chicken mixture instead of jalepeno - I find it adds another layor of flavor which it needs. But with that tweak, I find them delicious!
 
I like thighs marinated in Italian dressing (I make my own dressings but you can use bottled Kraft) and then BBQ'd, you can also cook these in a crock pot. They are tasty, tender and very good.
 
You have gotten some yummy thigh recipes but my question is what does she mean by a tray? Is it a sit down or buffet where these will work well or does she want more of a finger, appetizer type food? If that is the case, chicken salad (goggle for a recipe that is to your liking) on crackers or in tiny shells might work well.

To answer the above quote: It is a buffet and your right, I should have been more specific. I can see how bringing a tray of food, can be misinterpreted. Thanks.
 
I just LOVE pulled chicken - I don't eat pork, so I sub in chicken.

Boil chicken and debone, then shred with forks.

In roasting pan, place chicken, chopped green pepper and red onions (to taste.)

Stir in BBQ sauce - I make my own and just make enough to completely cover all of the shredded chicken and veggies. However, I've heard that Sweet Baby Ray's is good too!

Bake at 325 for an hour. Or you can do this in a crockpot!

Easy peasy - bring buns, cheese and other sandwich fixings plus the chicken and you're golden.
 
I just throw them in the crock pot with some BBQ sauce and cook them. I'll add a little extra BBQ sauce on them right before they are done. They fall off the bone. It's so good!
