I was at a baby shower several years ago, and the host served a very yummy version of chicken salad. I have been trying to get the recipe ever since, but have been unsuccessful. It's not like the traditional salad, as this one had grapes and almonds in it. The chicken was a little bigger also. She served it with croissants, and it was perfect! It was wonderful because I don't care for the traditional kind. Does anyone have the recipe for this, or know where I can find it? I've looked everywhere. The closest that I have been able to find is the Tarragon Chicken Salad from the Publix Deli, but it's still not what I am looking for!

The grandmother of one of my students when I taught 3rd grade used to make one that had white grapes & almonds....and sometimes pineapple instead of the grapes. When I asked her what was in the dressing, she rattled off a list of ingredients that sounded pretty much like what I used at the time....mayo, celery salt, a little vinegar & sugar, chopped celery, maybe some milk to help thin it??? I haven't made it that way in years, though. I seem to remember her saying that the fruit was what gave it the different flavor. :confused3

More recently I've been making mine with orange juice, wine vinegar, orange zest, no salt seasoning, a touch of garlic powder...and sometimes I'll throw in a can of Mandarin oranges drained really well. I've also started using shredded chicken instead (I cook my own, but you can use the canned stuff) and that makes a big difference to the taste I think also.

I make mine similar to that one...but just wing it....here is the list....
mayo (I use light Helman's)
onion finely chopped
sugar, not much just to make it a little sweet
cider vinager, not sure why but I guess to make it a little tart
grey pupons mustard (just a little for flavor)
orange juice, to make it moist and add a little twist
salt and pepper to taste.
Celery
grapes, sliced
walnuts
celery seed (again not sure why but it looks nice and adds some flavor)

Just start with the mayo base then add a tiny bit of each till it is a good flavor.....

Around here we call that Waldorf Chicken Salad. I don't have a recipe (but would love one!), but if you have a Fresh Market near you, give that a try. They have a fabulous Waldorf Chicken salad, with grapes, pecans, celery, and other ingredients. It's very very good, especially with a croissant.

I don't have the recipe either but a friend of mine makes this alot for Bunko, Showers, scrap parties and other get togethers. Actually she buys Mrs. Grisssom's chicken salad and then adds sliced purple grapes, chopped pecans or walnuts and finely chopped celery. She serves it on crossant rolls. It's VERY VERY Good. :goodvibes

I found our families favorite chicken salad recipe, and since it seems to fit all the things you want, I'll post it here:

2 or 3 large cans of chicken white meat (or cooked and cut up chicken breasts that are cooled)
2 bunches green onions cut up
3 stalks of celery, diced small
1 cup or green or red seedless grapes, cut in half
1 pkg. of slivered Almonds, not sliced, slivered
Enought Miracle Whip to moisten thoroughly

Mix all together and serve on Croissants. These can be made up and held in the fridge until serving.

I have also included Honeydew melon balls in this salad and then serve on a bed of lettuce or a lettuce leaf inside of a round slice of honeydew melon.

We made this for my niece's bridal shower, and it went over so well, they served it at the reception, too. Not a speck left over, and those of us in the kitchen kept having to make up more and more. Very yummy!

Love Waldorf salad but in this area it is made with apples! YUM! Now I want to go to that little sandwich shop that use to make the best! It was served on white french loaf kind of bread.....hmmmm wonder what I will be doing tomorrow around lunch time?!?!??!

I make mine with grapes or pineapple...all "to taste"

cubed, cooked chicken (buy it precooked at Gordon's Food Service!)
mayo
chopped grapes or drained crushed pineapple
chopped celery
chopped almonds
pinch of salt (unless the almonds were salted)

Here's my difference, though...I take storebought pie crust and cut with a bisuit or scalloped cookie cutter and line mini muffin tins, bake, then fill those with the salad (and a sprinkle of paprika). HUGE hit wherever we go. Lots of fresh, clean flavor, not a lot of spice. BTW, you can also leave out the fruit for a more savory version (DH prefers it that way)
