Chicken Salad - Recipe Me!

This is so silly... but I had never ever had chicken salad - ever, until Sunday. And it was a strange encounter.

I was at Macy's and headed to get a Starbucks. The Macy's I was at has this snazzy food court like area - and I passed the deli, spotted the chicken salad and thought "that looks so good!" And got some...

And it was wonderful! Delightful, with cherries and celery. Oh so good. Normally it looks like a pile of mush. This was all chunky and yummy!

How do I make this stuff? Give me your best chicken salad recipe.
 
chunks of chicken (nice meaty pieces, not little teeny slivers), mayo or miracle whip, a little bit of cubed celery,cubed granny smith apple, chopped walnuts, handful of raisins..pinch of garlic powder, pinch of onion powder, fresh cracked black pepper, and maybe a smidgeon of sea salt..I put it all on a nice crusty roll, top with cranberry sauce..and voila..my favorite lunch!

Ingredients


  • 4 cups cubed, cooked chicken meat
  • 1 cup mayonnaise
  • 1 teaspoon paprika
  • 1 1/2 cups dried cranberries
  • 1 cup chopped celery
  • 2 green onions, chopped
  • 1/2 cup minced green bell pepper
  • 1 cup chopped pecans
  • 1 teaspoon seasoning salt
  • ground black pepper to taste


Directions


  1. In a medium bowl, mix together mayonnaise with paprika and seasoned salt. Blend in dried cranberries, celery, bell pepper, onion, and nuts. Add chopped chicken, and mix well. Season with black pepper to taste. Chill 1 hour.

Mine is very similar.

Replace the walnuts & raisins with slivered almonds & dried cranberries and lose the cranberry sauce and you have it. I serve mine on a croissant with a nice piece of lettuce. I don't prefer crusty rolls or 'farm' bread for this. The softer croissant minimizes the amount of chicken salad squishing out when you bite into it.

Do I boil the chicken? Roast it? Whats best?
 
Are you a Costco member? They make a yummy chicken salad with their leftover rotisserie chicken.

Actually, I'm not sure how to tell you to cook your chicken because whenever I make it, I use leftover chicken that's usually from a large roasted chicken.

* 1/4 cup sour cream
* 1 teaspoon paprika
* 1 cup chopped celery
* 1 cup green grapes
* 1 cup chopped pecans
* 1 teaspoon seasoning salt
* ground black pepper to taste

I use the rotisserie chicken from the grocery store for the chicken, I don't like canned. Now I'm hungry..
 
I would roast it instead of boil, you'll get much more flavor out of it. Then you can make stock with the carcass.

Or, instead of curry powder, you can add dried rosemary. And another time add some tarragon instead. One of my favorite ways to make it is with a little dill sprinkled in. Yum! :thumbsup2
 
I wanted to thank everyone!

I have been a chicken salad eating fool!!!

I've tried all of these - minus the green peppers (I hate bell peppers!) - and every combo has been fantastic.

I even got 'creative' and did:

Chicken
Garlic Mayo
Bacon
Tomato
Black pepper


Which was superb, as was:

Chicken
Garlic Mayo
Shredded Cheddar
Green Onions
A Sprinkle of taco seasoning

Another add-in some people use is grapes (cut in half before adding). Red grapes give good color. Add celery too and serve on a sandwich size croissant. Yum!
 
I would like a good chicken salad recipe but I don't like berries, grapes, nuts, or apples in mine.
 
I just cook my chicken while its still warm I shred it then after it cools I add chopped celery, mayo salt (a little) pepper and parmesan cheese. (I boil the chicken to cook it)

I make it with a small container of chopped pineapple and add the juice as well. We also like it with chopped apples and celery, too, plus the pineapple, and miracle whip. We love chicken salad! :thumbsup2
 
My fave chicken salad is cut up grilled chicken (or leftover rotisserie chicken cut up), Hellmann's mayo, Tastefully Simple Spinach and Herb (to taste), sliced almonds and craisins...YUM!!

it's also good with avacado. my mom was doing the low carb thing a while back and would pop the pit out of the avacado and fill it with chicken salad. really good!!!
 
I like to boil my chicken with poultry seasoning, then shred it, mix it up with mayo (Hellman's only!), chopped onion, a little dill (or sweet) relish, salt and pepper. So yummy. I love chicken salad. I think I could eat it every day.
