Chicken Portifino - What I ate tonight

I found this recipe tonight and tried it. It was so yummy. Since I only made a single serving I didn't use the chicken broth. I also grilled the chicken on my George Forman grill and used shredded Colby/Jack cheese instead. Still, it was mighty good.
