We're also having the Parmesan Crusted Chicken. We tried it with three different sauces. Mushroom cream sauce, marinara, & a limoncello beurre blanc sauce that they whipped up for us on the spur of the moment in the kitchen at our menu tasting. The limoncello sauce is fantastic!
Since our buffet also includes tortellini with alfredo sauce and penne with marinara, we opted to have the limoncello sauce on the side. That way we've got a cream sauce, a tomato sauce, and something more unique on the buffet. If we weren't already having the other sauces on the pasta dishes, it would have been very difficult to decide, because all of them were delicious.
Honestly, though. I thought the chicken tasted very good without the sauce. It was flavorful and moist, despite the fact that it was in the "hot box" when we got there. I was apprehensive about it when I saw them pull it out of there to plate it. But it was awesome.
