Cherry pie receipy

I was wondering if anyone has a good cherry pie receipy using sour cherries. I bought a bucket of sour cherries and froze them and would really like to make a pie. I love cherry pie but don't really have any good receipys. Thanks

Mmmmm, sour cherries! I haven't had any in years - but I always liked them in a custard pie. :teeth:

Sour Cherry Custard
2 eggs, separated
2 Tbl flour
2 Tbl melted butter
1 c sugar
1 c milk
2 c sour cherries

Beat whites separately. Dredge pitted cherries in the flour. Mix well: egg yolks, butter, sugar & milk. Stir in flour covered cherries. Fold in egg whites. Pour into an unbaked crust. Bake for 10 minutes at 425; turn oven down to 350 and bake for another 30 - 35 minutes or until a knife inserted comes out clean.

I like the contrast of the sour cherry with the sweet custard. But if you're looking for a "standard cherry pie" recipe, how about this one?

Cherry Pie

2½ c sour cherries
1/3 c cherry juice
1/3 c brown sugar
1/3 c granulated sugar
3 Tbl minute tapioca
1 Tbl butter
1/8 tsp almond extract
2 pie crusts (9")
Combine cherries, juice, sugars, flavroing & tapioca. Let stand 15 minutes. Pour into pastry-lined pie plate. Dot with butter. Place crust or strips on top as preferred. Bake at 425 for 10 min, the reduce to 375 for 30 min.

LOL, Spinning! Actually, I was a project manager for a firm that tested computer software until 2 1/2 yrs ago when I got laid off. Before that I was a SAHM and before that I was an elem teacher. ;)

I just really got into organizing & collecting recipes while making a shower gift (DS's favorite recipes in a Longaberger recipe basket) for my new DIL.

I'm also a pack rat! I have all the cookbooks & recipe cards I could snag from my grandmother's house - the ones my cousins didn't see. She was PA Dutch & a wonderful cook!

Of course most of her handwritten stuff just lists the ingredients w/o directions. For many she gave them to me verbally when I got married. Those don't even have amounts usually - unless they say stuff like "a piece of butter the size of a walnut" or "flour - add flour to make a dough." When I asked how much that was, she just said "add flour until it looks right." ;)

I really miss her! Such happy memories. She & Grandpop always spent holidays with our family even though there were 3 other children & 12 other grandchildren. They just never asked for them - so we were the lucky ones! :D
 
I have everything except the tapioca. Is there something else you can use? Also is it wheat free? The tapioca I mean. I can make my own pie crust that is wheat free so that's no problem. It looks good. I appreciate you looking it up for me.

I believe tapioca is wheat free. Here is a definition I got from a Google search:

"Tapioca is basically a root starch derived from the cassava, or yuca plant. It's often used to thicken soups and sweeten the flavor of baked goods."

In this case, the tapioca is used to thicken the juices of the pie. I've used it in apple pies instead of flour. I don't have an exact calculation for this recipe, but maybe this will help:

for 1 tablespoon cornstarch substitute 2 tablespoons flour or 1 1/3 tablespoons quick-cooking tapioca
for 1 tablespoon flour substitute 1/2 tablespoon cornstarch or 2 teaspoons quick-cooking tapioca
for 1 tablespoon tapioca substitute 1 1/2 tablespoons flour

I wouldn't get stressed about the exact calculations. I've found that the recipes are very forgiving. I'd guess that for 3 Tbl tapioca, 1 Tbl cornstarch should do it.
 
Piratesmate thanks. I think I would prefer to use flour or cornstarch. I think only because I don't have to go out to buy anything. I think I'm going to try to make one this weekend. Can't wait.
