I have an ADR for 3, will there be a problem if one person doesn't show up and there are only two of us? TIA.

You will be fine. Just let the castmembers at the podium know there are just 2 of you. Also, you will not be charged the no show fee for the missing person. It is always easier to show up with less people than show up with extra guests and hope they will be accommodated.
