Just know they dont take reservation if you have more than 6 in your party. The Cheesecake Factory accepts a limited number of reservations for parties of six or less. We do not take reservations for large parties, Valentine’s Day, or Mother’s Day. Parties are seated in order of arrival based on party size and may not be combined. We will hold reservations for 5 minutes after your reservation time. Additionally, there are a few other off-peak times when we would be happy to accommodate your large party, so please call your local restaurant and speak to a manager. We will be happy to answer any questions and guide you to the best times to dine!

It is done as more than likely the bill is split between two or more people.
Calling a large table a Headache would be from waitstaff which in the majority of places I have dinned at declined. There are some places with better service and simply because there are less people eating out these days. The owner of a restaurant would far from call a large party a headache but more of the abilty to keep the doors open and employee those who feel a large group is a headache.
I'd split that large a group into 4-4-6. Mix up families to make conversing more fun.
There were nine at a Longhorn rectangular table when my FIL took the family out for my birthday last fall. People really can't converse easily at such a large table. We were talking in two groups of four with me seated between; it was awkward. You're left shouting down it or getting up to go speak to someone further down.
That's one reason why the largest table in many restaurants is round and seats 6. Everyone can see and speak with others easily. Makes for much more enjoyable dining.
OP didn't say "this will need to be un-done". They said "this will need to be done", therefore the eye roll tells you there are people in the group that wouldn't tip and OP is trying to make sure they do.
