Cheddar Cheese Soup....Yummmmmmm

Well we finally got to Le Cellier last week. And I do have to say that waiting all year for that cheddar cheese soup was worth it!! It was delicious!! Oh and the pretzel bread was the best!!

I did not care for their version of "potato salad" since it was just boiled red potatoes with salad dressing poured over them.

I did get the recipe for the soup. It's not difficult to make and if anyone wants the recipe I'd be glad to post it.
 
I have been waiting for cheese soup all year! Even though it is muggy outside, your post made me want cheese soup even more!

Is the recipe the same as the one on Deb's site? I tried making it, but we don't eat bacon and we didn't have any beer in the house...it still turned out pretty well.

Cheese soup is one of me and hubby's fave soups--would love to see the recipe when you get back from work. This is our first trip to WDW--do y'all know of any other resaurants that serve it?

Every now and then we get it at our local IHOP--fantastic stuff :)
 
FFerret - I believe the soup is only available at Le Cellier in Epcot. But it's definately worth the trip over there.

I'll post the recipe later on this evening. I can't wait to make it myself.

We've never been before and I don't think we have room for LeC on our schedule--but there's always next time! I had just read some 2001 reviews about THE PLAZA at MK serving Chicken and Rice Soup--hope they're still serving that because it's another favorite.

I've been wondering to myself what is it about soup anyways? Maybe because it's a great comfort food, filling, and inexpensive :)

We're going to stay at the Fort Wilderness Cabins in early Oct. I'm not much of a cook at all, but if the recipe's simple enough I can make it there (well, I'll try it out first here of course, REALLY sounds awesome).
 
This makes 1 gallon so adjust accordingly

It has to be served warm and it does not freeze according to the CM at the restaurant.


1 lb Cheddar Cheese shredded
1/2 lb bacon
4 strips smoked bacon, applewood
10 tbsp butter
5 cups milk warmed
1 cup celery finely chopped
1 length leeks finely chopped
2 each Red Onion finely chopped * ( this is obviously an error in type. I would say maybe 2 cups of the red onion.)
1 1/2 cups flour
1 qt chicken stock
1 1/2 tsp tabasco sauce
3 tsp Worchestershire sauce
Black pepper to taste, Kosher Salt to taste
1 bottle (12oz) slightly warm ale

1. Slowly heat milk.
2. Brown the bacon (separately from the smoked bacon) first then after it's rendered halfway add the smoked bacon and render together.
3. Add the butter and melt
4. Add celery onions and leeks. Cook till translucent.
5. Add flour and mix throughly to form a roux
6. Add chicken stock and simmer for 3 minutes
7. Add warm milk and stir vigorously to thicken.
8. Cook out roux until thickened. (it should not have a starchy taste).
9. Reduce heat to low and add cheese. Stir until melterd.
10. Season with Kosher salt, pepper, tabasco and Worchestershire sauce.
11. Just prior to serve, add warm ale.

NOTE: When re-heating the soup, do not bring to a boil as it will break up.



Whoever makes it first has to give a full detailed report!! :)
 
I can't wait to try the soup!!!!!! Here's my question: Do they have the cheese soup for lunch too or just dinner? I found a menu online and it was only listed for dinner. Please tell me it's not true!
 
The soup is available for lunch. That's when we had ours.

You will love it. When we sat down I was a little hesitant about ordering. I mean, here it is August in Florida and I'm thinking about soup? Well it wasn't at all like I thought. It was light and just delicious!!

Yummm....I just love this soup. It is something I am looking forward to! The pretzel bread is also awesome - my mouth is watering just thinking about it!!
 
Goodness--looks like I need to change my schedule again so we can try Le Cellier!!! We've had such awful luck making gumbo roux before :)

I'm copying it now just in case hubby feels more adventurous then me. Hmmm, maybe my grandmother (our fam's wonderful chef) might care to take it on; wonder how important "applewood bacon" is :)

Would y'all know if Le Cellier's open at 11:30 on October Saturdays? I have a really old guidebook (20th century!) that says they only open at noon.
