Checking my ADRs but confused about days and dining plan...HELP!

I am a little confused about one thing- I am going to WDW Jan 21-28. We are using the deluxe dining plan. However, I don't check in until 8 pm on the 21st. So we aren't really using our dining plan that day.
So here is my question - we check out on the 28th but will be there until 3 pm. Can I use my dining plan on that day or can I only use it days that I am actually staying the night in a resort? Hope that makes sense.

Yes, you can use it on your last day, even if you are checked out. Even though you are checking in at 8pm, you could use CS or Snacks credits. The DDP doesn't limit you to "each day". Example, you could use 2 TS credits, one day and then the next day just do CS. You have a "bank", for so may TS, CS and snack credits for the total of your stay, it is up to you and your party as how you wish to use them. Example: you could use them all up in 3 days.

You can start using your DxDDP credits the first day you check in through midnight of the day you check out. So if you don't need to use any credits that first day but you need to use several credits that last day, no problem.

If I remember correctly, I believe the credits expire at midnight of the day you check out, so you will be able to use your credits up until the time you depart. If you want a little something to eat after you arrive I would recommend a CS meal at your resort if they have something that interests you. That way you won't have to go far for a meal and can relax afterwards from your day of traveling.
