I know that the usual check in time is 3:00 but if my memory serves me correctly, we can arrive early the morning of check in to get our documents to gain entry to the parks. Correct?

Yes, we always arrive early in the morning and are able to check in and get our docs and KTTW. If a room is not ready, the resort will call you latter in the day and let you know your room #. No need to stop back by check in, your KTTW will already be programmed with your room info.
 
You can check in any time after 6am. Above info on room being ready/not being ready is correct!
 
I arrive early every year I visit. Great way to squeeze in an extra day. The first year, my room was ready when I got there (10a), so we were able to go straight to the room after check in. The following year, the rooms were not ready, but they still let us check in. We put our bags with bell services.

When the room was ready, the front desk called me, and bell services went ahead and took our bags to our room. When we got home from the parks, our bags were inside our front door, and we were ready for the next day!
 

Yes correct - but we have usually gotten our rooms right away - we stay at the Boardwalk and I think they try pretty hard - otherwise they will set you up when the room is ready and in the meantime they give you your park passes and you head off....make sure you have some clothes aside from your suitcase so that you can change after your trip....

For Disney-speak, "check-in" really refers to room availability.

You can still check in when the computers roll over at 6 am and receive your packet and tickets, parking pass, etc.
