Will our chances for an upgrade be better if we check-in early in the morning or arrive later in the day?

I don't think it really matters. I've gotten up grades both times. You best bet is to call that morning of check and and make your request to guest services ask them to check for you what upgrades are available and if there is one they can tell you and assign it to you. So if not you could call back and check later on if something opens up.
