Here are two big hits at our house
2 pkg Lipton Parmesean Noodles & Sauce ($.99/pkg)
1 can of tuna ($2)
Prepare Noodles according to directions on package. About halfway through cooking, add the tuna (cut it up a bit first). Serve with your favorite veggie. If you want to get fancy, you can prepare the dish then put crushed cheese crackers and dots of butter on top and bake it for a while.
2 pkg Vigo Red Beans & Rice, or Black Beans & Rice ($1.39/pkg)
1 Chorizo or other spicy sausage ($1)
Handful of frozen corn (cheap!)
Tortillas ($.99)
Brown the sausage and drain. If you have an onion, chop it and saute it while the sausage is browning. Add water according to package directions. When the water has boiled, add the bean and rice mixture. I usually serve this with a tossed salad and tortillas. There is plenty left over for another meal or lunches for DH.
For some reason, DS LOVES the following:
A can of beans with a hotdog cut up and baked with the beans; and a baked potato topped with canned chili and cheddar cheese. Cheap and simple. Usually served when, for whatever reason, DH and I are not eating with DS.
