I need recipes for stuff that does not have to be frozen or kept in fridge no extra space this time of year.

I need to make the stuff this week for a bake sale the Sat after Thanksgiving.....NOT my idea to do sale at that time. So I need recipes for stuff that will keep well.

The last thing I want to do the day after thanksgiving is spend day in kitchen baking.

Buckeyes. My dad routinely gets 12 dozen out of one of his batches and they hold well in the fridge. He makes his peanut butter balls about the size of a quarter and that helps. I find if you make them too big, the peanut butter/ chocolate ratio is off.

Note: You do need to put the peanut butter balls in the freezer for a short period of time to get them harder to handle the chocolate dipping.

If you need to make them over a week ahead and can't store yourself in the fridge or freezer...not many things will work. Your best best will likely be a sugar-based candy - if you have the tools, I'd suggest making homemade lollipops - they keep well in an air-tight container on a counter at room temp for a month. I've never made them (so I won't suggest a recipe), but I know others who have, and if they have pretty wrappings and colors, they should sell very well...

Rice Krispie Squares. People love them. Not too sweet. No refrigeration needed.

What about Chex Mix? I would double bag it for storage, but I know I appreciate when there are non-sweet options at a bake sale!

Different varieties of chex mix, chocolate suckers, cookies, flavored popcorn (I make an oreo white chocolate popcorn), varieties of different barks. Granted none of this is going to last for a week on the counter, but a couple days should be fine.

Great ideas ladies I know about the bark for sure sealed in a Tupperware box it keeps for months providing the human mice don't get in it. I used to make the bark an many chocolate candies an sell them most of it costs more time an money than I'm willing to donate for a bake sale MY OWN sale oh yeah I'd have a stock pile of that stuff by now. I know bark is super fast an easy made more money off that than anything.

Chocolate dipped pretzels
They need to set for 15 min in the refrigerator but
they store well in an airtight container up to two weeks.
Here is a site that has the recipe I use
I package mine in plastic baggie tied with a nice bow and tag.
Options are
white chocolate
milk chocolate
white/milk combo
option *decorate with sprinkles* or Candy canes crushed

Like PP, I was going to suggest chocolate dipped pretzels. I make mine with rods dipped Wilton Melts with a double broiler and a cookie sheet covered in wax paper for quick cleanup. You could get them melts in different colors if you wanted to for the holidays or school colors. Pretty quick and easy and always a hit!

Strawberry cake mix brownies (Lemon is also good) I don't have the recipe with me but should be pretty easy to find online. Also a favorite for kids is fruit loops or peanut butter Captain Crunch coated with the white almond bark. (sound nasty but is actually really good) I just melt the almond bark in the microwave and pour over cereal and stir, just spoon out in piles and cool on foil.

I second the rice krispie treats. I have to make some today for my child's bake sale tomorrow. Last year I made them into the shapes of mickey heads and dipped the ears in chocolate. This year, I'm making them more like a biscotti shape, dipping about halfway in white chocolate and putting sprinkles on them.

Fudge.
White trash mix (recipe from Alton Brown)
Rice Krispie treats
chocolate dipped pretzel sticks decorated with sprinkles or chocolate chips or coconut

I know homemade noodles are popular here. They and quick and easy to make and would last without being refrigerated.

You could take marshmallows and put them on a stick and dip them in chocolate or white chocolate and roll them in all kinds of things. Those could be made a day or two ahead so you don't have to store them long.
