Character Meal questions

Hi,
I'm planning a trip in 2011. I know that's a long way off, but I'm already planning because it's really my favorite part of the process! This anticipation will be getting me through the next 11 months :dance3:

I have been reading lots of posts on restaurants, and all of the information is wonderful! I have a couple of questions..

I have heard people talk about character meals that are not buffet. I am hoping to do several cm's during our trip. I have a 5 year old (he will be 6 by then) and the last time we were there we went to Ohana for breakfast with Lilo and Stitch (it was great!!) and to the Beach Club for the breakfast with Mickey, Donald and Goofy. We also did the Hoop Dee Doo Revue and LOVED it! It was really a perfect trip!:lovestruc

This time, I was thinking of Tusker House, Chef Mickeys, Crystal palace and possibly another one? Are all of those buffet? Which character meals AREN'T buffet? I wanted to do Mickey's BBQ, but I think it will be considered "off season" in February. :confused3

We'll be celebrating my husband's 50th birthday. His one and only Disney experience was when he was 16, with his family, in August. It was NOT a good experience. He isn't much of a hot weather person to begin with.. and then imagine a drive to FLA from OH with your entire family, at age 16..
anyway... I think this will be much more fun!:rotfl2:

For other experiences while we're there.. I'm planning (on his actual birthday) Chef De France and the Illuminations Cruise. Another day at Epcot we will do Biergarten (he is of German descent and will enjoy this, I think). Also want to try one of the DS Fantasmic packages? And possibly Whispering Canyon? :woohoo:

Other "must do" things that you think I should budget? I want this to be a truly memorable experience for all of us. :wizard:

Tusker House, Chef Mickey's & Crystal Palace are all buffets. The Garden Grill is a char. meal that's not a buffet. It's at the Land in Epcot. I've never eaten there but many people like it...it's served family style all you care to eat.
 
A few more that are not buffets would be Akershus and CRT. Even though you have a boy, he may still enjoy the princess interaction at 6. We are taking DS5 (6th Bday trip) to both in May. He likes ALL of ther character meals.
