This may be a no-brainer question, but bear with me as I'm totally new to this. If I book a character dining reservation at a restaurant located in one of the parks, am I locked in to that park for my visit that day? (I don't think I'm planning to get park hopper tickets.)

So, for example, if I wanted to do princess dining at Akershus in Epcot, then I should do that on my Epcot day? Or if I wanted to do Crystal Palace in the Magic Kingdom or Donald's Safari in Animal Kingdom, I should plan those for the days I'll be at those parks. I can't just go in the park for dinner and then leave and go to another park without a park hopper pass, am I right?

Correct! You need to use your park ticket to get into the park, even if it's just for a character meal so if you aren't planning to use hoppers, you'll want to book your ADR for the day you plan to be in that particular park.

Note there are a few character meals outside the parks, so that is an option. 1900 Park Fare, Ohana, Cape May, and Chef Mickey's come to mind.

You are right. If for some reason you do want to hop later you can always upgrade at the park.
