Changing Rooms Question

So here's my story... In the past we have always drove through the day and arrived at WDW at 6 or 7 in the evening. We have always just booked the extra night at the WDW hotel vs. an offsite cheap motel. To me it wasn't worth the hassle to save not much more than 10 bucks (All Stars off season with a discount was only about $60 a night w/ taxes) to find a room and lug enough stuff to get through the night and pack it back up an go to Disney the next morning. Well I like the MYW ticket pricing (10 day split between 2 trips) and I like the meal pricing (dining plan) but now if I check in a day early it will cost me an extra 100.00+ (dining plan) plus the cost of the room. So here's my question... Could I book a room at the All Stars for one night and then do a 6 night package starting the next day? I can't see that being an issue. So, I guess my real question is would I have to change rooms? Again not a big deal, but just curious.
 
Last year we stayed room only for 2 nights room only, then did a 7 day package then a single night room only. Only problem is 3 reservations, and we had to go back to customer service to get new room cards etc but we didn't have to change rooms and it was fairly easy process, We are doing the same thing this time.
 
Thanks! That could be perfect. I like the dining plan, but using them all up would be tough, not for a day or two or three, but for a week straight!! So if I did the package with meals (for 1/2 of the trip even) and just used them wisely for those couple of days I could work it into a much better deal for us.
