Changing resorts and canceling

Need help! We are staying at GF in June for a conference. Right now we are booked checking in Monday and out Friday. We know we want to arrive on a Sunday and have a booking for Sunday night at a value... depending on money we might consider staying at the value on Sunday and Monday and only Tuesday thru Friday at GF.. if I book Sunday and Monday at value as one reservation - will I have trouble cancelling Monday and still keep my rate??

Likely Yes. Disney has made this type of change difficult.

So I’m better off making a separate reservation for Sunday and then Monday right?
