Ceviche recipe anyone?

I fell in love with ceviche in Mexico. Anyone make it at home? I have googled and saw some recipes. Just wondering if anyone has a favorite. Also, what kind of firm fish do you recommend?

I'd use salmon, thinly sliced and marinated in lime juice as the key ingredient

I saw this the day you posted it & was positive I had a recipe, but couldn't find it anywhere. I was just going through some old F&W Festival recipes and found it. I had it under Seviche instead of Ceviche.

Seviche/Ceviche
Food & Wine Festival 2001
Yields 6 portions

1 lb Pink shrimp
1/3 c Red bell pepper, diced fine
3 Tbl Red onion, diced fine
1 c Diced tomatoes, diced fine
1 clove Minced garlic
1 tsp Brown sugar
1 Tbl Chopped cilantro
1 Tbl Chopped parsley
4 Tbl Lime juice
1 c Lemon juice
To Taste Kosher salt
To Taste Black pepper

Method: Combine all ingredients and mix thoroughly. Allow to sit for 24 hours prior to serving. Adjust seasoning.
