Finally something I know a lot about that I can post about.
It took me some digging but I found two contacts in Disney Dining that will assist you in making your life extremely easy going down and enjoying yourselves.

Theresa is going to most likely be the one that can handle you best. When you contact her and explain she will forward you a collection of word documents that list eaxactly what is Gluten Free in every park and the locations that will have the biggest and best selection for counter service and snacks. And finally, if there is a counter service on the list and you love it, just ask them and they will see if anything can be done to accomodate your allergies and let you get some of your favorite foods. Once you make your ADRs, make sure you note in your ADR that you have Celiac/Gluten disease, you simply email her a list of your reservations and she will contact all of the restaurants and the chefs and inform them of your dietary needs. After that the chefs from the table service restaurants will contact you to discuss your best options from the menu and also inform you of what off menu items they can also do for you.
My partner and I both have dietary restrictions, he is diabetic. And we have decided that Disney is now our yearly destination for our vacations, becuase they have taken all of the worry out of our trips.
Finally, since everyone snacks, I use a online ordering site to by my snacks as they are well below list price on products that are gluten free, everythingnutritious.com
