::MickeyMo::MinnieMo We will be tent camping/glamping for 9 days in November and celebrating our 25th wedding anniversary and my 10th anniversary cancer-free. Made our ADRs as early as possible and now I am working on menus for suppers at the campsite that are a little more fancy than usual camping dinners. Equipment we will be able to bring to cook with are: bbq grill, 2 burner stove, crockpot, electric skillet, and electric griddle. Any suggestions for that special celebration supper that you make for just the two of you? I did look at the wonderful recipes listed on the camping forum but also want any "elegant" suggestions that you have made while camping. Help from everyone please!

Well, if you've already checked out the recipe thread then you've covered just about everything I know on camping cooking. My idea of romantic dinner is a grilled steak and baked potato.

However, I will for sure say Happy Anniversary and congratulations on the 10 years of kicking Cancer's rear end!

Shrimp scampi on the grill is delicious.Grill shrimp and add to butter, olive oil and garlic. Or buy the seasoning pack and add your own butter. Also good with lobster tails.

I like to make garlic shrimp over the camfire and my family loves it. I have a long handled basket thingy that I line with aluminum foil, usually two layers, then dump in a bag of frozen shrimp with the tails still on, then dump a whole bottle of the liquid butter spray stuff over it and then add a bunch minced dried garlic. I sit it over the campfire until the butter has boiled for awhile. You have to really like garlic though.

Another thought is to get a Disney cake. If you check out the cake chatter thread you'll see some beauties. I am ordering two cakes for mine and dd's bdays on our trip. They make mini cakes and you can get a white chocolate castle on top and that would be perfect for 2 people. I believe the cakes come from the contemporary bakery and you just pick up at Trails' End. Needs to be ordered about 2 to 3 weeks out.

I second the steak and potatoes, but that calls for wine and mushrooms and maybe asparagus as side dishes :)

Congratulations on both anniversaries. We pretty much believe anything you can make at home you can make at the campsite. We also find Disney restaurant recipes online and try them. Actually, any dinner item that is special to the two of you. As for us there are some dishes that we especially enjoy and mean a lot. Cheese fondue served with peasant type bread cubes, salad and wine (or champagne). Lobster tail with steak. Clams/mussels with pasta - yum. Bananas Foster crepes for breakfast - yum - topping: Grand Marnier, butter, brown sugar, bananas and crepes. Another breakfast suggestion; eggs Benedict (you can buy packets of Hollandaise sauce). Mimosa's. Chicken Condon Bleu, Chicken Kiev. You are only limited by your imagination. Table cloth suggestion: go to a fabric store and you can find Disney themed fabric. We have one featuring Mickey Mouse. As for a cake, Walmart carries great looking and tasting cakes in a variety of sizes. We bought a smaller souvenir Bride and Groom Mickey and Minnie as a topper for a cake which you can buy at the parks. Also, at Disney Studios on the Main Street there is a shop where you can purchase monogrammed towels - hand towels and bath towels. They can monogram them with a bride and groom Mickey and Minnie encircled in a heart with first names and a date. We bought one for our anniversary and it is hanging in our bathroom and we smile when we look at it. We honeymooned at Disney World in 2001. Honestly, mac & cheese can be romantic if shared with right person. Our first meal at Disney World was sharing a pizza and beer on the porch at Trails End sitting on the rocking chairs that used to be there - gone now darn. We reminisce about that we do to Disney World. Best wishes to both of you.

Might I suggest some crepes made on your skillet? They are actually very easy. You can find a simple mix at a fancy cooking store, or make your own from scratch. I love to put nutella and fresh strawberries or bananas with a splash of Bailey's and then powdered sugar for decoration. If you have a way to keep ice cream cold, a small scoop of Talenti Salted Caramel gelato on the side finishes off the dish nicely!
