I had a cat. 12 guaranteed room and I ended up with a cat. 12 room. I was really hoping for an upgrade to a better category so I ended up paying for an upgrade. You really should just buy what you want in the first place. JMHO!

Our first cruise we had a cat 11 gauranteed and got bumped to cat 4. Last cruise we had a cat 11 and got moved to cat 9. It can happen but i've been told our cat 4 upgrade was lucky and very rare.
We have category 11 cabins with specific room numbers. If you have specific room numbers, does that mean you probably won't get an upgrade? I'm a little confused between the "guaranteed" status and getting room numbers assigned.
If you have been assigned a room number, that that is usually the room you will get. A category "guarantee" means that you will be assigned to a room in at least that category. Either one could be upgraded, or not.
The guarantee is used when a certain category is full or close to full, but the cruise itself is not. They'll overbook certain categories, and as cancellations occur, they can assign those rooms, or provide upgrades. There's no sure-fire way to get an upgrade, sometimes they will upgrade someone with an assigned cabin and move a guaranteed reservation in there. Sometimes the guaranteed reservation gets upgraded. The best advice is to book the category that you'll be comfortable in and treat an upgrade as a nice surprise, rather than be disappointed if the upgrade never happens.
There's a pretty good description of the guaranteed cabin at the CruiseMates.com website (link).
