We are cruising in May with our friends who have a 7 mos old. First thing you should do is find a spot that has shade...there are many palm trees on the family beach with chairs under them. If you get off the ship fairly early you should have no problem finding one. There are also nice beach umbrellas all over as well.

If you are bring a stroller onboard, I would definately bring that onshore as well. Mainly for a place to have the child sleep if they get tired.
Bring sand toys or purchase them there on the island (pretty expensive). Check with your dr. about the correct sunscreen to use and use is frequently....have them wear a hat, long sleepves, you know...pretty much everything you would do normally. Maybe bring a full size sheet from home so your child has a larger area to sit on before they wind up the sand. Also bring a collapsible cooler to keep the bottles cold.
Unfortunately I doubt there will much rest and relaxation for you unless you can get the baby to sleep for a bit!!! Good luck!!!
