Cash vs. Gift Cards

my kids were given Disney gift cards for Christmas to spend as they wish at the parks. Since then, they have also saved up a decent amount of cash to spend as well. My first thought is to put it all on gift cards so it's easier for them to keep track of, but are there any vendors (particularly those wandering with balloons/light up toys, etc) who do not take Disney gift cards? Are they accepted in downtown disney (specifically Anna and Elsas boutique)? Would it be best to keep some of it as cash?
 
The balloon vendors are cash only, as are the pressed coin machines. The light-up toy vendors do accept gift cards. In DTD, only the Disney-owned shops accept Disney Gift Cards. So A&E Boutique does, but other places (e.g., Build-A-Bear, RideMakers, Lego, etc.) do not.

Marceline's, World of Disney and the PIN Kiosk do as well.
 

I'm pretty sure A&E Boutique, Disney's Pin Traders, Disney Vault 28, D-Street, Marceline's Confectionary, WonderGround Gallery, and World of Disney all accept Disney Gift Cards.
 
Balloon vendors on Main Street last month pointed be to a place I could pay with credit/gift card and then come back and show the receipt to get my balloon.
