Gotta question.

I have a cousin who is getting married at Disney next year. She would like to stay at GF in a 1 bedroom for 2 nights but my home resort in SSR. I am not sure how lucky I will be to secure a one bedroom at GF using points at the 7 month mark. Could I make a cash reservation and then at the 7 month mark turn the cash reservation into a DVC point reservation.

Not technically. Cash inventory is completely separate from points inventory.

You could make the cash reservation and then cancel it if you can get a points reservation at 7 months. But if there is no availability for points, you can't turn that cash reservation into a points reservation.

As noted, no you can't. The chances of getting this reservation using points is very low. I would not promise but would set up reasonable expectations. Reserve SSR then try for your top choices day one 7 months out and WL two options. Then if you don't get VGF you can always keep a WL going and might get it later.

Agree with Dean. Other option will be renting the VGF points to make a point reservation and rent out your SSR points to cover the expenses. You may have to pay little extra as most VGF points asking is higher then SSR.

What dates are you looking for? Some times of the year are easier than others.
