I feel really stupid asking this but I have only traveled by car in the past so I don't know exactly what is considered 'carry on' for the flight. I am assuming a back pack fits the bill and similar size duffle bags? Can my 2 children age 5 and 6 at time of cruise also have their own carry ons making 4 pieces of carryon? ( mostly for the kids toys and travel snacks in theirs)

Most airlines let everyone take 1 carry on and one personal item (purse) with them onboard. Backpacks would be fine....you should see what some people bring on board considering them "carry-on". If you check out your airlines website they will have size dimensions for carryons that must not be exceeded.

I just flew last week and someone brought on a huge stuffed polar bear onboard....they wanted to fit it on a seat but the flight was full so they had to shove it in an overhead bin and took up the whole bin just for the stuffed animal. I was surprised they were not made to check it.

One "carry-on" and one "personal item" per person is the rule, as mmouse37 noted. Each of the airlines has their own policies, although most are comparable, and there seems to be a lot of room for interpretation, however. Usually briefcases, purses, small backpacks, pillows, etc. are counted as personal items, although I've heard of people who have been hassled about one or more of those on occassion.

American Airlines' rule on carry-on size is fairly typical and says that the bag should not exceed 45 linear inches (length + width + height) or weigh more than 40 lbs/18 kgs.

All carry-ons and personal items must fit in the overhead compartment or under the seat. Irregularly sized items may run afoul of a particular flight attendant on a given day, although I've rarely seen anyone given any trouble.
