If my kids bring their small blankies with them on the flight, do they need to be stored in a carry on bag upon arrival? Can they carry them on and plus have a carry on bag?
 
Because I'm too cheap to pay for checked bags (hey, Disney is expensive enough!), we carried on 10 (!) plus stuffed animals. Each of the kids (2,4,6) had a backpack (considered personal item) with their toys for the flight (stored under the seat) and a carry on suitcase with their clothes (stored overhead). They also each had a stuffed animal. Two of them put their "pets" in their backpacks, but DS4 carried his the whole time. Never had a problem (other than the time it takes us to get on and off the plane!).

As for coats, we're from Colorado, so we didn't think we'd need them (we were there last week). During the day, I was in short sleeves, but when it rained and got late, we were glad to have coats with us.
 
They can carry their blankets on the plane and hold them in their seats. They aren't considered part of your carry on count. Jackets can be stowed in the overhead or under the seats. They also do not count as your carry on count. You are allowed one carry on to store in the overhead bins and one personal item (purse, backpack, tote, etc.) to store under the seat in front of you.
 

While it does get chilly at night, and you might want a little something extra for little kids, I can't imagine someone from Canada needing a winter coat for southern CA, even as it turns to winter. :)

When putting jackets/coats "away" on the plane, please put them on top of your suitcases; don't just put them on the "floor" of the bin, because that prevents suitcases from going in there. (something DH has seen happen countless times and it boggles his mind each time!)

It would probably be *easier* to get on the plane if the blankets were tucked inside of bags, just so they aren't stepped on or dragged along dirty floors.
