I'll be at the Sheraton La Jolla Hotel for three days in early June without a car. Where should I take my 5yo and what should we do, with the understanding that I'd have to take public transportation or Uber/Lyft wherever we go?

The children's pool to look at the seals, you could go look at the Birch aquarium, Torrey pines state beach/nature preserve. Because of the cliffs and layout of la jolla none are easy to walk to from the Sheraton but none are more than a 5-10 minute drive. You will be right next to the college though and the bus system near the college may have busses to all those locations.

If you could, I would suggest renting a car. In the end might be cheaper than taking Uber/Lyft everywhere. Our public transportation system is pretty useless. That said, close, but still requiring a ride is Scripps Aquarium, Torrey Pines State Park, the Hang Glider Port, La Jolla Shores, the Children's Pool in La Jolla (not suitable for swimming but great for watching Sea Lions), the Museum of Contemporary Art, the La Jolla Sea Cave (requires navigating some steep stairs). Distance to the zoo, Balboa Park, Sea World, Legoland are all far enough that renting a car would make more sense. Might want to see if the hotel can provide a shuttle to some key destinations.

will be staying at this hotel in July with our two teenage sons for the first time. Let us know how you like it!

Checked out on Sunday. The hotel was fine. Low ceilings, comfortable rooms, beautiful landscaping. The rooms and the lobby/restaurant are in different buildings and not the easiest to move between, but we often felt like we were in Hawaii.

We ended up renting a car from the Enterprise on the bottom floor of the hotel for $28/day to go to the Zoo and Old Town, and the rest of the time friends gave us rides. There is a bus across the street (by the VA hospital) that will take you downtown but it takes an hour.
