I am booking a quick trip in july with the summer discount. Currently I am booked for RO but may switch over to a package. If I do this I know they have to cancel and re-book in this case could I lose the room I have booked under the discount? What if I change it after the book by date will this affect the discount availability? sorry if this has been asked I just couldn't find the answer on here! I have never done a RO discount and switched over to a package Im unclear of how it goes. TIA

No it doesn't. The rooms that are left for the discount at the end of the promo will still be in the pool to change to until they get snatched up by other bookings. It takes guest services to change it once the promo expires so it can take a long time calling in (20-30 min waits usually) so if at all possible do it before the promo expires to save yourself time.
