We already have our reservation for Via Napoli.
I was told that we can convert it to a CP package by one of the CMs.

How early in the morning can I call to convert it to a CP package?

Disney Dining (407-WDW-DINE) opens at 7am eastern.

Converting has not been possible in past years. I don't think I would trust that CM's info - I'd call as soon as the packages go on sale and either get it converted or book a new CP package for Via Napoli. If need be, you can cancel cancel the non-CP Via Napoli reservation you have now.

This will be our first time trying for the CP package - our first time at Disney for Christmas. We are wanting Le Cellier for Christmas Eve - hard to get I am sure.

What would be the best option.. trying to book online right at 6am (eastern) which would be 5am for us (central) or calling?

I'd say online booking, since it's an hour earlier, but one of the previous posters said last year online booking lagged by a week or two, so you may have no other option but to call the dining line at 7am eastern. Good luck!!

You can't convert your reservations. When I booked Teppan Edo for this past 12/26, I had to cancel that reservation and then rebook with the package.
