It depends on your level of skiing/boarding. Seymour doesn't have a lot of advanced terrain but it does have a great park.

Grouse has a bit of everything. Cypress has a bit of everything too. I'd recommend Seymour if you're beginner-intermediate, otherwise one of the other two. It also depends on the snow. When we were there the Vancouver mountains snow wasn't the greatest.

We did a day at Whistler, left two hours before opening and then left at 4 to come back to Van for a hockey game. It was a long day, but oh so beautiful. Whistler definitely has the wow factor, but then so does skiing overlooking Vancouver on a clear day or night.
 
I'd do Grouse or Cypress if you're only there for a short period. But that depends on how much of a skier you are. Whistler/Blackcombe is awesome when there is plenty of snow, top to bottom cover, long runs, pretty village etc. It really deserves at least 2-3 days skiing.
 

I would have to say Whistler. The little village is so beautiful and my kids had the best time there. We even did the zip lining tour and had a blast on it... 4 years later and they still mention the snow and their time there. So I would like to give it a HUGE :thumbsup2 for the experience.
 
I can't comment on skiing but would definitely say Whistler is stunning - one of the best places we have been too and so many Australians working there. The peak to peak is worth doing too :)
