There is not a prohibition against using tripods in the parks, however depending on crowds, where you set up, etc. you might have a CM ask you not to use it in a particular situation as they can be real tripping hazards.
I used a tripod to take pictures of Wishes and Illuminations. I also used it around Epcot to take other night pictures and around Animal Kingdom to take long exposure pictures of some of the different water falls.
You'll have no problem using one. The tripod I used is a travel tripod. It folds to only 13 1/2 inches and fits in my backpack. If you have a bigger tripod and don't want to carry it all around the park all day long, consider renting a locker. According to others, a normal sized tripod will fit in one of the Disney lockers at the parks.
Thanks! My tripod collapses to about 18-20 inches. It isn't that heavy at all, but the locker suggestion is excellent since I wouldn't want to carry it on the rides. I was thinking about taking my tripod on probably the next trip after my October trip (date TBD). I would like to spend a few days and focus on photography verus the attactions & rides that I normally focus on.
