I know rebooking on board requires a deposit. Can you pay with a gift card? I assume if you end up cancelling the money goes back to the gift card or do you lose your deposit if you cancel?

Good question, I would ask them there, normally they debit the credit card you used Last on your reservation. Guest services can take them, so I would re to say yes. But not 100% sure. If they do not you could ask for the on board booking to debit your stateroom account, they have done this for me, and add the cards at guest services. Enjoy.
Unless they've changed the rules since I last cruised, they definitely will accept a Disney Gift Card for the deposit. (I don't know about stacks of $50 ones though - I only get ones I can reload at the Disney Store) And yes, you need to hold onto that card because if you cancel, it goes back onto that Disney Gift Card (assuming you aren't concierge where the deposit is not refundable).
Yes, this is how I pay for mine. With the new $200 placeholder policy I bring two $100 Disney gift cards and piece of cake. As stated just make sure you keep the gift cards and I label the gift cards with a sharpie to keep up with them.

Interesting Jodie I did my first $200 "placeholder cruise" booking in last month and named Costco like I always do and you are right - Costco couldn't seem to "pull it over" into their system. In the past since DCL just booked the furthest, cheapest date out at least there was a date attached to it. I called DCL and they confirmed Costco is listed as the Travel Agent so I think it's something on Costco's side at this point. I honestly let it go since DCL confirmed it was listed as Costco and I also have an email when I booked the cruise onboard with the typical, "your client has booked a cruise..." meaning it went to Costco and I was copied as a courtesy. Hmmm...I hope this doesn't spell drama in the future? We can chat offline if we need to as we are in the same boat (LOL) it appears!
