Probably not. Aside from the possibility of there not being any rooms available on the night you want to add, that night wouldn't be considered part of your package.
 
No on the DDP. That is part of a package and needs to be modified a minimum of 3 days prior to check in.
As pp stated, hard to say about getting an extra night on your room. Just depends on availability.
 
I would call and ask before going. I called to ask if I could add a person to our reservation at the last minute and was told we could do it right up until check in. And we are on a package with the dining plan.
 

on our next to the last night at pop we decided to add and extra night to our stay. they considered that a room only reservation and we good not add another day of dining to it. also on our original day of check out we had to physically go and check out under that reservation and then check in under the new reservation. we did not have to change rooms. we got to stay in the room we were in.
 
I would be very surprised if a guest can add a room on to their res at check in, with a dining plan.
The dining plans are a part of WDTC packages, which have to be paid prior to check in.
I would think adding extended day(s) on to a Disney res with dining would require the addition and payment to be made no less than three days prior to check in. That is what I would expect. But certainly could be wrong as I have not personally done this.
