I wouldn't redo them. In the end, in 5, 10, or 20 years, never mind 1 year, you'll look back and it will be trivial.
Sorry, I'm not trying to trivialize it, because I'm a perfectionist, and it would bug me. But....

you can look back and wish it was different, but it will just be a minor thought.
Enjoy the trip, your kids won't think anything about it, the characters will still think they are adorable, and you'll have a great time.
One more option: I would not waste the time and expense of putting a whole sheet of carstock behind them. If you really need to make it so the binding doesn't cover anything, glue a tab of paper behind the left side where you will bind it. Scrapbooking glue (not tape) is really strong, and won't come off easily. Don't use regular glue, use scrapbooking glue.
