Can the parks fill to capacity for guests staying onsite?

You wouldn't have a problem with that plan since CP is in the MK, not at the GF. There is no character lunch at the GF. So you'd get to have your character lunch and wouldn't have to worry about being able to get back in the MK afterwards.
