I am making hamburger sliders tonight and want potato salad as a side. Any ideas?

I usually cook the potatoes, obviously and then marinate them in Robusto Italian dressing after cutting them up for the day..Then, add whatever you want as far as veggies, I use onion, green pepper and cucumbers diced, then add some spices, garlic powder, seasoned salt and pepper, whatever you like and then the mayo, Hellmans. After mixing that up, I garnish with Paprika and radishes to give it color.

Potato salad is such a subjective thing...I love mine (and my mom's) but I'm not usually a fan of anyone else's. :confused3 Think about what's in the one you buy before you try recreating someone else's recipe!

Personally, I make a very simple potato salad with cooked potatoes, celery, green olives, and chopped hard-boiled eggs. (We *really dislike* onion so I leave it out, although I know most people put some in their potato salad.) Dressing is mayo, a teeny bit of mustard (just enough to make it the slightest bit yellow), some garlic salt, a little bit of celery seed, a drop of cider vinegar, and maybe a sprinkle of sugar if I got heavy-handed with the vinegar. I garnish with sliced egg and a little paprika if I'm taking it somewhere -- if it's just for us, I don't bother.

Good luck finding one that works for you!

Mine is really simple - boil potatoes and cut in cubes. Add mayo and pickle relish to taste and consistency you like. That's it!

mine's easy too

boil potatoes with skins on along with a few eggs (I like to boil my potatoes and eggs together to save on pots)

skin potatoes when cooled, peel eggs
chop celery and onion
mix together, add salt and pepper and a little bit of yellow mustard
add mayo (I don't use a lot since I don't like potato salad soup, lol!)

Finely chop about half an onion. Add to cooked peeled and sliced potatoes. Mix together a Cup of Mayo and 1/4 cup miracle whip and a squirt of mustard. (depending on how much you are making keep the ratio the same and make more or less) Add mix to potatoes. Then add salt and pepper to taste.

Amounts are approximate just to give you an idea of what I do. I just kind of chop and mix.

Potatoes cut in bite size chunks (4 cups)
Apple cut in bite size chunks (1 cup)
Celery (1/2 cup)
Hard boiled egg (1 cut into small chunks)
Small Onion (1/4 cup or less, chopped very teeny tiny)
Mayo (as much as needed)

This is the recipe I grew up on. The apple usually throws people. My DH saw me making this and gave me a hard time. Then he ate some and now keeps his mouth shut. I am also not an onion lover and will run my onion through a food processor to get it tiny. You kind of need a little bit of onion for taste. My grandmother used to make it with big onion chunks I did not like but made it easier for me to pick out.

I put a little bit of ground mustard and bacon in mine. It's better hot, like a loaded bake potato.

Dh likes his cold with eggs in it.

I could eat BOWLS of my neighbors potato salad!!! LOL I finally asked him what he put in it and it's just soooo easy. He basically has the basics (boiled potatoes, chopped up eggs, onion, celery, a bit of mustard, mayo) But what he does different is adds a couple shakes of dill weed and cuts 1/2 the mayo with sour cream!!! It's the sour cream that makes all the difference!!!

Thanks for the idea. Think I'm going to make burgers/potato salad later this week!!!

I'm Southern, so this may be a little too fatty for some folks. Potato Salad is the one thing I am asked to bring to every food function(ham is the other). There is no written instructions or measurements(my Grandma never measured anything), so the measurements are approximate.

Peel, dice/cube, and boil 6-7 large baking potatoes or 8-10 smaller white potatoes. I usually boil my potatoes about 15 minutes because more than that makes them too mushy. Drain(I use a colander), and put in large bowl with about 3 heaping tablespoons of mayonnaise(NOT salad dressing). I add diced onion, carrots, and celery to my recipe in almost equal amounts, but you can omit/adjust these to suit your taste. I add 4 to 6 oz. of sweet salad cubes or relish, 3 diced/cubed boiled eggs, and sprinkle celery seed on the salad before mixing it all together. I then pour the potato salad into a clean bowl and place sliced boiled egg on top, and sprinkle with a little paprika. I have made three large bowls of Potato Salad since Dec. 24, and have only one more to make this week. My oldest is in Holland until Jan. 5, and has asked that I have one ready for her when she gets off the plane.

I do the same thing and add eggs and mustard. I have been known to eat the whole bowl by myself. LOL
