Not paying attention to what I was doing and opened up a can of pumpkin...can I freeze it? I could make pumpkin bread but don't feel like baking now plus we have so much goodies left from Easter. Thanks

Scoop it into a freezer bag, squeeze the extra air out and flatten it out so the bag is thin, then close up and freeze. It will be fine.

Also if you have dogs its a great, healthy, filling snack for them. I put it in ice cube trays freeze it and they love to eat it. I make sure they are in the kitchen or outside when they do this though.

If you want to bake just a little, mix it with 1 devil's food cake mix, bake as directed on box...yummy! That's it, just the two ingredients, it's a Weight Watchers recipe.

Devil's Food Cake (it's the chocolate one), no particular brand.

The Devil's Food Cake mix can be made into cookies too. :thumbsup2

Here's a simple 2 ingredients cookie from my Cookies from cake mixes! NOW w/ BISCOTTI and Cookie BARS thread over on the Cooking Board. I think with either cake mix cookie (the devil's food or the spice mix below,) you can add some walnuts or white chocolate chips. Maybe top with a cream cheese frosting.

Pumpkin Spice Cookie

1 (18.25 ounce) package spice cake mix
1 (15 ounce) can solid pack pumpkin puree (not pumpkin pie mix)

DIRECTIONS:

1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
2. In a large bowl, stir together the cake mix and pumpkin until well blended. Drop by rounded spoonfuls onto the prepared cookie sheet.
3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

These would go great with a warm apple cider.
