So I'm a large fellow, not so much in the waist line, I'm just extremely stocky. I'm 5'11" and my shoulders are 37 inches wide.

I haven't been on a plane since 2001, I was considerably smaller then.

How uncomfortable do you guys think I'm going to be on a plane? And is there any difference between delta economy and southwest seats?

Also, how difficult is it going to be for me to fit on the rides at disney?

While I'm not a flyer, I have often heard that Southwest is more generous in their seating room. Whether that's still true is anyone's guess. There's always first class.
As for rides, Disney is also very generous. I have been bigger in the past and never had any issues. While many rides throughout the four parks do have finite-spaced seats, they accommodate. Other rides like Haunted Mansion and various boat rides are bench seats so there is no problem.

Well first class you'll be fine :) there might be more information in the transportation forum but generally talk to the airline, they might suggest a second seat and most will refund that seat cost, I'm just not sure the restrictions or procedure is to get that arrangement.

Well not knowing exactly how you are, I can safely say there is almost nothing you can't ride. Maybe sum of all thrill rides at epcot. i'm not small, 6'4" and I have no problems on anything. From armrest to armrest there is very little variance in airline companies seats except first class. Delta has the comfort seating that's like $50 more and gives you more leg room, but the seat isn't any bigger. I have traveled with companions that were 6'/415lbs and 6'5"/360lbs and both were in regular economy seats, the taller's knees were dug in the seat in front of him and stiff after the 3 hours, and the heavier needed the seatbelt extender, but it wasn't impossible.

None of the rides were a problem for either, though that was in 2009.
 

My husband is 6'7 & 300 lbs. Needless to say - he really does not fit into the standard airline seats and first class is out of our budget. Nine times out of ten though, he asks to be seated in an "emergency row" which is far more roomy & they grant it to him. Maybe you could try that approach?
