How likely would I be able to get these "must-do's" done in one day?

Space Mt (Hyperspace, if still up)
Star Tours
Indiana Jones
Splash Mt
Pirates
Haunted Mansion
Soarin' (if running)
Tower of Terror
and one table service meal

This would be a Sunday in April, we'd have a park hopper, be at rope drop and stay until close.

Options are April 10th or the 17th. I'm guessing the 17th may be slightly better since it's not as close to some late Spring Breaks? It's just me and my husband, no kids.

Thoughts?

Yep if you use FP you should be fine. We've done all of those and more in one day.

I would say YES, definitely, provided they are all up and running. You never know when something will break down :(
I would even say that you could get all the DLR ones done by early afternoon and then hop over to DCA to do the others. Add in RSR, if you don't mind doing the single rider line. You could also do SRL for Splash and IJ if you really needed to.
Have fun!!

I agree that you should be able to get everything done. DL is usually open from 8:00 am to midnight on Sundays, evening during the non-peak season. DCA is likely to be open from 8:00 am to 10:00 pm. So that gives you quite a long time to get those attractions done (assuming, as stated, that they are up and running).

Easy. As others have said, use FP to its full potential. Pick up a Space Mountain FP, ride Star Tours, then ride Space with your FP. Go pick up a Splash FP, come back and ride Pirates/Haunted Mansion. Use your FP for splash. Hit Indy on the way back to the hub. It probably won't even be noon by the time you head to DCA. Pick up a FP for soarin or tower, ride the other while you wait for your time, etc.

Very Easy, especially if the park opens at 8am.

Get to the entrance gates 30-15 minutes before it opens.
Head to California Adventure first ride Tower of Terror (Doesn't need FP this early), ride Soarin (Doesn't need FP this early), grab a RSR FP if would want to ride that later... should be close to 9am by now.
Head to Disneyland, grab a FP for Space Mountain, Ride Big Thunder (Doesn't need FP this early) because there will be no wait, then Splash (Doesn't need FP this early), then Mansion (Original version doesn't need FP), then Pirates, grab a FP for Star Tours, and FP for Buzz Lightyear just because its disconnected. Should be around 1130am by now so have lunch.
Then use FP to ride Buzz, single rider to ride Matterhorn because you are going to need to waste some time while you wait to use FP for Space, use FP for Space, then FP for Star Tours.
Grab a Indy FP before you use the FP for Star Tours.
Now you can head back to DCA to use FP for RSR and then come back later to use FP for Indy at Disneyland.

Have fun

That's a basic list of our family's must-do-daily list. Including those, we average 22 attractions a day. And still manage a table service restaurant... Sometimes even a premium table service like BB or CC that seems to take longer.

I'd start nice and early in the morning, and, assuming they are open, you should be able to knock out most of it before afternoon snack time :)

You can do it all! And enjoy a TS. Do be ready to spend extra time at your TS. During summer with reservations we commonly wait an extra 10-20 mins to check in and be seated. And even with that you'll be fine (do make reservations btw). IMHO if you want to a premium like Blue Bayou you will still have the time to enjoy it.

OH- Single Rider when you can! I think Star Tours, Soarin', Splash, Indy had single rider lines. Just ask a cast member when you get to the attraction and if SRL is running they will give directions.

Star Tours doesn't have SRL.
The SRLs at DL are: Splash, Indy, Matterhorn. At DCA they are: RSR, Grizzly, CA Screamin', Goofy's, Soarin'
