Can I add days to my ticket once I'm there?

We are planning a quick trip next month to WDW and to see HP. Can I buy a 1 day ticket and then add another day if we feel as though we didn't see anything? Can I buy a one day one park, and then add "park hopping"?

Yes, you most certainly can. Just make sure you do it before the ticket expires. Don't buy a one day ticket and then go back the next day and try to have it upgraded. Upgrade it before the day is done.
