If you are trying to do the equivalent of dropping off a casserole for someone who lives too far away to be able to drop off the home cooked meal yourself, I would second trying to find a local catering company - its going to come closest to the experience of having someone make dinner for you when you are too busy/stressed to take care of yourself. Meal delivery boxes (blue apron, hello fresh etc) require a lot of prep, usually, which doesn't sound like what you're looking to do. If you can't come up with a catering company, how about finding a restaurant that is local to them that would deliver, then sending them a gift card (with an accompanying note that you would like to make them dinner, but the distance makes that impossible).
When my DD was born (she was a preemie and it was crazy) someone sent us some frozen dinners - it was a sweet gesture, but they were actually kinda gross. I was super appreciative of the random casserole meals, and was happy to eat pretty much anything I didn't have to figure out for myself.
