I had a gastric bypass done a few years ago. My doctor provided me with a medical card to present at restaurants requesting that his patients be allowed to choose from the children's menu, or be given the child's price at a buffet. My request has almost always been granted (either at home or on vacations) but I'm wondering what Disney's policy is on this? I certainly eat less than my kids do, but am more than willing to pay what I need to. Any experience with this?

Disney doesn't have an official policy. You'll very likely, but not assuredly, get a CM who will be amenable, but if having your request turned down would ruin your trip, I'd recommend you call ahead and make arrangements to have your request granted, before you arrive at the restaurant.

I agree with the previous poster. You can also call WDW Dine and they can put a note on all your ADRs what your case is. (We are having to do this b/c my friend just found out that she is allergic to avocados and walnuts). If WDW Dine can't so anything about it they may be able to direct you to the individual restaurants where you can speak with a manager.
