We just started going camping as a family. We go with my parents and my bro and his family. I'm looking for some good ideas for what we can make while there. We'll be going for 2 days.

Last time we just did burgers and baked potatoes for dinner, blueberry pancakes, scrambled eggs, homefries and bacon for breakfast.

We're looking to do something different this time. Any ideas???

If you are not worried about your heart...

fry some bacon (whatever serving size)
remove and fry some potatoes and onions.
add bacon and salt lightly

we have done everything: hot dogs to tenderloin, ribs, nice salmon filet or catfish nuggets.

cooking over a campfire can be tricky. it can be very hot. A propane stove can take away the ambiance but is much easier to control.

are you tenting or in a popup? Or the condo on wheels maybe?

We're tent people and my heart is just fine. ;)

My dad did some stuff one time over the fire, shrimp/lobster with butter and garlic wrapped in foil. I don't eat seafood though! So, I'm looking for some good stuff that I would like along with the kiddies!
 
I love potatoes scrubbed clean, light coat of olive oil and some italian seasonings. wrap in foil and cook on a grate or right in the fire until soft. turning once or a few times depending on how hot the fire is.

then just unwrap and cut into cubes and add your favorite topping. Butter, sour cream, chives, bacon bits etc...

Corn on the cob is good. Soak in husk in water for 15 minutes or more, then roast. the water steams them in the husks and the hairs come off real easy when cooked. Bring a good water proof cooking glove or two for pulling them off the grill and peeling.

you can do a pork roast. they are way cheaper than beef. season and wrap in a lot of foil. then when done cut into filets. serve with veggies or whatever...

We just went over the fourth and had a variety of foods.

Teriyaki Salmon
Steak
Pasta Salad
Italian Salad
sourdough bread


Tacos
Spanish rice
Chips and salsa
Beans

And the camping fav....hamburgers and hot dogs

For breakfast we always make sure we have one easy morning. Cereal or oatmeal, fruit, and donuts.

I am going this weekend.:yay:

I have to talk to sis about "the menu" today. They do have a propane stove which makes cooking a bit easier. We will have 14 people in tents.

I will update after the talk.

Cast Iron is your friend!

Love my cast iron on the fire - cast iron dutch oven is a MUST! You do need to learn how to use it as an oven ( not too many coals under or over it - just enough to keep even temps going) You can cook pizza, stews, cakes, cheesecake - etc (you can put something in a throwaway tin pan and put in the Dutch Oven)!

( we call them astronaut eggs - they have a paragraph on the above website but call them Omlettes in a bag!) went back and read some of the recipes -

TIP: if you use foil to put things on the fire - invest in the new Reynolds Foil that has the no stick stuff sheets!!

I was too lazy to go find my camping recipe book, I know I've compiled it from years of camping, and Scouting!
 
Banana boats

Peel down one peel of a banana without taking it completely off.
Scoop out 3-4 little holes in the banana, and fill with marshmallow, and pieces of hershey bars.
Place the peeling back, and wrap in foil. Put on the campfire grate for the marshmallow, and chocolate to melt.

I also love to do pan pizza on the campfire, in a cast iron skillet.

Menu so far...

Thur. dinner

Tacos (unless I come up with something better)

Fri

Breakfast- your standard eggs, smokies, etc

Lunch- Pizza

Dinner- (not sure, we want something fun, it is when everybody will be arriving.)

Sat.- is float day on the Huzzah River

So breakfast is quick.

Lunch will be premade sandwiches and cold fried chicken from KFC along with chips, cookies, etc.

Dinner
Grilling brats, hamburgers, hotdogs
(We will be too tired to do anything fancy)

Sun is leave day so no cooking.
 
Would love the pizza info!

precook your favorite sauce
and most other toppings, like meats etc...

easiest would be to buy a boboli premade crust.
heat one side, then flip and add all the toppings in your desired order.

then just cook till hot.

Tacos (unless I come up with something better)

I camp with my Girl Scouts, and our favorite is Walking Tacos. Get single serving size corn chips for everyone (Sams is cheap.) Brown your meat and add taco seasoning. Then scoop meat and all toppings into the corn chips bag, mix, and eat. We usually take salsa, sour cream, and cheese. So delicious, and almost no clean-up.
 
I always remember making muffins in orange halves....it was fun in girl scouts... lol we also somehow did a pinaple upsidedown cake inside a coffee can somehow... I mean inside a coffee can... I think in a tin can somehow... I know I am no good here, but the memories... I loved the muffin idea though
