I have a Sony Handycam DCR-HC38. It has a touch screen, which I wasn't sure if I'd like, but it's actually very easy to use. And there's a record button on the screen and by where your thumb would go (made for a right-handed person). All of the buttons are within reach of the right hand - no awkward two-hand movements in order to record or zoom. It can be done very smoothly.
It has 40x optical zoom, 2000x digital zoom, and Nightshot plus, which are great features (I sometimes pull my camcorder out and use it as binoculars!

). It records on DVCs. The only annoying thing about transferring film to the computer is that it needs a Sony "i-link" cable, which does not come with the camera. However, there is also a regular USB port that will transfer to Macs (the difficulty is most likely due to my computer, not the video camera).
It came with a 1-hour battery, which when used efficiently, can last all day (if you record a little then flip it off, the battery recharges). You can purchase longer lasting batteries, but the bigger the battery, the heavier the camera.
Speaking of weight, it's very light with the one hour battery and easy to hold. The strap is very adjustable and comfortable.
Also - you can choose to flip the screen out or lead it in. The digital screen appears in the viewfinder which I think is really cool. You can also turn off all exterior lighting for dark rides at WDW.
I've taken my camera to WDW two times and have found it very easy to carry around and use to film.
