Calling all dieters! What's your favorite diet recipe?

Like millions of others, I started dieting on New Year's Day. So far, so good.

But I LOVE FOOD and I LOVE to cook. I also DON'T want to get bored and give up. So I have been trying new recipes and am looking for even more.

So what is YOUR favorite recipe for a diet?

Made this last night and had it again for lunch today. YUMMY!!!!

I roasted a huge sheet of asparagus, onions, red peppers, carrots, butternut squash and zucchini the day before in EVOO and salt and pepper. Saved the veggies and then yesterday morning...
Browned 1lb of extra lean ground turkey.
Threw that in crockpot with..
1 can of Hunts spaghetti sauce, large can crushed tomatoes, garlic, italian seasonings and roasted veggies. I let it cook on low all day.
Then I roasted a spaghetti squash for 45 minutes with EVOO and salt and pepper.

I used the spaghetti squash as pasta and served the sauce over it with a little grated parmesan cheese on top.

It was so good and under 200 calories for a huge plate. It is only 42 calories for a cup of spaghetti squash, so you can have a ton.

For dessert tonight:
2 Reduced Fat Chocolate Graham Crackers filled with cool whip free.
Pop in freezer and it tastes like an ice cream sandwich.

Would love to hear other peoples favorites!
 
Butternut squash and chilli risotto (don't be put off by the word risotto, you don't have to stand and stir this one for 20 minutesontinuously!!!)

Chop an onion and fry in some low calorie spray stuff until soft.
Add a finely chopped clove of garlic (or two if you really like garlic!) and a finely chopped large red chilli and stir for a minute of so, being careful not to burn the garlic.
Add 250g (sorry, I'm English, you'll have to work it out!!) of risotto rice and stir, then add about 1/2 a butternut squash, peeled and cubed into about 1/2 inch dice.
Make up 2 pints of stock (chicken or veg, from cubes of concentrate is fine, but I know you guys can buy it in cartons and cans too!) - it needs to be hot
add about 1/4 of the stock to the pan, stir and simmer. As the liquid is absorbed, add more, then leave again. It usually takes me about 4 goes for it all to be used up.
By now the rice should be 'al dente' and technically it's ready to serve. I do however like to add 28g parmesan, done on a fine microplane grater to the risotto just before serving to make it more creamy, and also add a sprinkling of fresh parsley.
This recipe is supposed to serve 3, but DH and I usually eat it between us!!!

Really good recipe, and only takes 20 minutes start to finish (take that Rachel Ray!!!!)
 
That sounds delicious. I love risotto, but may not be able to have it while dieting....because I will eat the whole thing!

Grilled chicken cutlets very thin topped with broccoli rabe and roasted garlic. I sautee the broccoli rabe in a frying pan with a little olive oil S&P. Roast whole head of garlic in foil in the oven till soft. A little lemon drizzled on top and some grated parm cheese. So good!

I make a berry salad with blackberries, blueberries, strawberries, walnuts, pecans and fresh spinach. A little balsamic and olive oil. Toss and refigerate. I put that on cutlets also! Yummy sometimes a little red onion on that too.

I eat a lot of fish too. Mostly just grilled with grilled veggies. Kabobs are tasty and you can add just about any fruit or veggie to them. All different marinades too that are low cal. Served over brown rice or cous cous. I make a marinade that I love with pineapple juice, soy sauce, rice vinegar and garlic paste.

Love the recipe you posted sounds delicious! Will give that a try! :)
 
I hate vegetables so I have this very strange spaghetti recipe I made.


You brown a pound of ground chicken or turkey like it is ground beef. Once browned, add whatever seasonings you like and add water to cook it down a bit. (180 calories per serving)

Add in tomato paste or plain tomato sauce. This usually is 20 calories per serving if you find the right kind. Simmer til you are bored.

The spaghetti is 210 calories per serving so you cook that and then add it all together and simmer. (Draining the water, of course!)

I usually add extra tomato sauce/paste because the calories are so low.

Anyway, it is plain and everyone I know says it is horrible BUT it is somewhat filling and low calorie when you have the carb-cravings and you need protein.

I suppose one could add in the vegetables of your choice to make it better.
 
Angel food cake box mix with one 20oz can of crushed pineapple, mix the two together and bake. Delicious and so moist.

I like simple things like sardine sandwiches. Sardines are low in cals and high in protein. They are also lower in mercury than most fish.
 
I have a sweet tooth, so my recipe is for Diet Coke Cake:

1 box devil's food cake mix
10 oz. diet coke (I use caffeine-free, because it's what I drink - doesn't affect cake)

Mix and bake according to box directions. Very moist and sweet.

This is also good with white cake and diet 7-up or diet sprite/

I love nice pot of Goya Lentil Soup with diced tomatoes because I eat it as a soup and as a chilled salad.

I also huge fan of cannelini beans or chick peas, fresh garlic and greens like escarole, Swiss chard, Bok choy and last week I even picked up 2 bunches of collard greens which I am going to boil today with the seasoned ham flavored liquid left in my pan after roasting the New Years Day ham.. lots of flavor but no fat.

Then there is creamy tomato soup that I make with non-fat cream cheese, cabbage soup made with non-fat milk.

It's all trial and error but my rule of thumb is if i like the ingredients individually I will like them combined.
 
Think I will have the cannelini beans with sauteed spinach for lunch and the cake for dessert tonight!

Think you can use diet ginger ale with the cake?

Zucchini Alfredo

Using a potato peeler "peel" the zucchini into ribbons, exclude the center seedy part.

In a non-stick pan put the "pasta" a clove or 2 of fresh garlic, a sprinkling of sea salt & pepper and sautee over medium heat until the pasta just starts to wilt. Then add (I use Classico in the jar) alfredo sauce, toss and serve with a protein.
For 2 medium zucchini I use 30 grams of alfredo if serving with chicken and 60 grams if serving with ground 99% lean white turkey. I use a food scale for ease and accuracy of measuring.
 
Just made this for dinner.

VEGETARIAN CHILI

1 envelope McCormicks Mild Chili Seasoning
1 can kidney beans
2 small cans tomato sauce
Cut up an onion, celery, carrots and threw in some leftover roasted veggies.

Been simmering for about an hour. Will serve it over a baked potato (sweet) one for me for dinner with a little shredded ff cheddar on top



Must be under 100 calories a serving without the potato.
