Cali Grill and AK Night fun help

on August 31 we have plans to eat at Cali grill at 7:30. We were hoping to hop on over to AK after that because it's open to 11. I think our meal will be over by 9ish. Leaving us about an hour and a half to enjoy nightime fun. My question is...am I crazy? Will this plan work? I've never eaten at Cali grill before. Should we just go to EMH at the magic kingdom?

Cali Grill is typically not a "quick" meal - plus, one of the best aspects is getting to watch the MK fireworks from there. So my advice would be to not rush, watch the fireworks, and then go to MK
