cake filling and flavors?

Oh, goodness. I think it's safe to say there are MANY options. The best thing to do is a tasting session. If that isn't possible (ESCAPE wedding or no travel plans), I'm sure you'll get many recommendations on here.

We had marble and Bailey's mousse at our Escape in June '08. IMHO...it wasn't as good as it sounded.

For our wedding in Jan '09, we had Chocolate cake with Peanut Butter Cup mousse (very good!) and the surprise favorite (even for me) was Lemon cake with Tropical Mousse! Amazing. And I'm a peanut butter gal.
 
Our fav. was chocolate w/buttercream, but we're doing red velvet w/butter cream. :) For cake, there was also marble, yellow, and almond. For fillings there was Bavarian cream, white chocolate, chocolate mousse, tropical mousse, strawberry mousse...and that's all I can remember, lol. I didn't try most of the mousses because I tried the chocolate+tropical and just don't like mousses, plus my mom is allergic, and my dad doesn't like 'em either, so we were never going to get that kind anyway. HTH! :)

We had the same choices...we picked Almond cake with Amaretto mousse, vanilla cake with raspberry mousse and chocolate cake with peanut butter mousse.
 
We had chocolate cake with raspberry mousse (grooms cake), yellow cake with Bavarian cream and fresh raspberries (my favorite and so delicious), and marble cake with peanut butter cup mousse. The peanut butter mousse was a big hit with the guests. I don't think you can go wrong really.
 
We are doing Marble Cake with Baileys Mousse, Red Velvet with Buttercream and my FAV Yellow Cake with Tropical Mousse (OMG SO GOOD)
 
At our wedding, we had the following:

Bottom: Almond cake with amaretto mousse
Middle: Marble cake with dark chocolate mousse
Top: Carrot cake with cream cheese frosting

They were ALL very yummy, but the overwhelming crowd favorite was almond cake with amaretto mousse. It was "shut up" good. Just TRY to carry on a conversation while you're eating it. I dare you. Even the chocolate fans said it was the best. I also, personally, think the carrot cake was among the best I've ever tasted. It's second only to the warm carrot cake at J Alexander's that tastes like they just poured melted butter all over it . . .

We ate wedding cake for several days after the wedding and it was just soaking with tastiness until we eventually had to break up with it. We still reminisce about the tastiness of our wedding cake . . . and can't wait to have a portion of it re-created on a future trip. :lovestruc
 
We couldn't make it for a tasting, so we sort of went in blind. Red velvet is my favorite so we alternated with cream cheese and bailey's mousse filling. The red velvet with cream cheese was such a hit that someone had it recreated for our home reception. It was amazing! Definitely worth considering - good luck!
 
We had marble cake with raspberry mousse and we also went in blind. It was absolutely delicious and everyone enjoyed it. Although, having now tasted red velvet cake, if we did it again I might choose that!
